I've been reading your forum for about a week.  I see lots of different ideas and opinions and a lot of helpful advice.  I have learned a lot already from ya'll and am sure I will learn much more.  Hopefully I am able to offer something useful to the group as well.

I tend to ramble so if there are any questions.. dont hesitate to ask.  

I tend to love outdoor cooking. I have 2 UDS, 1-COS, 2 gas grills, 1 weber silver, 1 weber jumbo joe, and a few other charcoal grills I have inherited.

As of late I have gotten into making sausage and have gotten pretty good with the fresh sausages, now I want to expand into smoked products so I have started to research building my own smoke house and thats what brought me here.
