Hi everyone, I bought a large bone in pork shoulder joint, as I've gone to prep it over noticed that the bone is green, and there is a flatulent odor coming from the bone.
Is this joint OK to eat?

Martin wouldn't steer you wrong, get rid of it!

I see this is your first post here, when you get a minute would you do us a favor and go to Roll Call and introduce yourself so we can get to know you and give you a proper welcome, also would you add your location to your profile, we like knowing where you are when we talk to you, Thanks!

Depending on how long you have had it I would wrap it and toss it in the freezer and take it back to the source whence it came The butcher/supermarket needs to know about these things

Is it a large piece?  bone sour usually comes from the bone or joint not getting cooled fast enough and this generally is a problem in larger animals!

I've heard of green ham?

This is different.

You need to take that back to the butcher.

Then violently place it in his body in a place where the sun will never shine!

Having said that, I will have to assume YOU have handled and stored the meat properly?  Or?  Did you inspect the meat at the point of purchase?

Good luck and good smoking.

If you have done nothing at your end to compromise it,forgot about, it left it in car, frig breakdown or similar ,take it back to point of sale & ask how much insurance coverage they have . Point out the range of penalties available from your local health dept & the size of court verdicts for poisoning consumers. The knock on effect from bad press ,you get the picture. Use phrases like "my remedy  in tort or contract".

Food poisoning in all its forms is nasty you need to make a point before whoever they are hurt some other consumer not as vigilant as you.
