Those look good. I like the way your smoker is set up, looks like you have even heat on all of your grates. The one thing I don't like about my off set is it's obviously a lot hotter the closer to the fire box. I guess the good thing is if I needed to slow things down, I could move the meat away but when it comes to chicken, I really want it hot and even.

You can simply use a cookie sheet to make a baffle to direct the heat toward to other side of your offset. Also If you have a dollar tree near you (everything is a dollar) get some bread loaf pans for water pans and put them on the firebox side of the grate. These two things will help with keeping your food moist and control temps.

yea that little smoker cooks good. elevated water pan may help it some.

I took a crack at them yesterday. Also smoked sone salmon. Yum yum
