Good for pulled beef? Update

So several suggested tacos and so I tried it and here is the tale.
Ready for seasoning

Seasoned then vacuum sealed for overnight rest

Wrapped at 160. Probe says 206. Pulled out ready to go.

Lesson learned. Went inside to pull and tough as all get out. Pulled out my standby analog probe, 180 it. Well crap, rice beans and fixing are ready. So grabbed insta pot for 20 minutes. I'll have to chk my maverick probes. Hoping I just had the probe in some fat. Rest back in insta pot for 30 more and supper tender.

Outside parts tender enough to pull so we eat. Seasoned in wok with taco season. Overall tastes was awsome

Temp is a guideline you use to start checking for desired tenderness. A couple of pokes with a fork would have told you where you were at...JJ

Ya really gotta hate it when your therm lies to you. Glad it worked out in the end and you had a great supper.

JJ your correct. I've read so many brisket threads about poking and it telling you when done its automatic procedure on the few briskets ive done. I was thinking "pulled" and put it in with pork, 205 with pork and I never had any problems but this ain't pork and temp was off. But I'll double chk temp next time and "poke" with a fork also.

Looks fantastic!
As it happens I had a probe go bad on me yesterday while smoking a chicken.
I pretty much know the time frame & the temps just didn't look right.
Changed probes & came out fine!
Glad yours did too!!

Thanks AL. I'll test the probe this week. Can batteries cause problems. I know it has been many cooks since I have changed them.

I think it's usually a bad probe, or bad where the probe plugs in that causes wrong readings.
Or a crack in the cable or the joint between the cable & the probe gets water in it.

Bad batteries usually makes the read-out fade out & disappear.

Well I would say "wrong temp readings" are about 95% caused by a bad probe.
In 9 years, and 3 Mavericks (all still in use), I had wrong Temp readings one time, and that was a Bad Probe.

I'm glad you were able to get it handled!
In reality once you wrapped it and continued cooking the smoke portion was done. You could have pulled it and Instantpot that sucker right then to save time! Heck that sounds like a plan to me from now on for good and fast pulled beef!!!! :D

I was thinking the same thing when it was all said and done. Kindly thinking same for small pork shoulders or butts.
