Giving UMAi a try.

I'm at a hospital in Arkansas to be with my mom. She fell very ill a few days ago. So, to pass time I'm continuing with ordering stuff for our kitchen and dining room rebuild. I also ordered what I need to do some UMAi pepperoni when I get home. I went with Al's write up. I got the 50mm casings. And will be bumping up the amount of spice as well. Should be fun giving this a go. I finally found where I can get fat back.

Oh man I want to get to the Umai dried sausage!
I started by doing their whole meat charcuterie. I bought a pork butt and did Coppa and Prosciutto from it. The Coppa came out about a week go and looked awesome. Best of luck on your sausage and I'll join the club there some day as well :D

I had intended to do the sausage first but time didn't allow for it. As was mentioned to me on SMF, the whole muscle stuff is faster and less involved to deal with. They were right and I'm glad that it was my middle ground approach :)
