ok, im in. I have dreamt of dry aging, but never did it.

Fascinating. What kind of prep do you go through after removing the meat from the bag prior to cooking?

I will trim most of the dry fat and meat then season and smoke.

I was planning to smoke this for Christmas, but when my "extended" family heard, suddenly I've got more coming than I think this will feed. So my plan now is to let it go for 3 more weeks and cut it into steaks. I'll get to Publix sometime this week and get a bigger one for the overflow crowd that's coming...
