Getting ambitious

Don't get too stressed over shorter 50 degree swings. I used to get pretty crazy over trying to run tight to a specific temp on my stick burner. I'm perfectly happy ok longer cooks to run +/- 50 most the time now. For shorter things like ribs I'll tighten that up. Butts are looking great.
You’re right, it didn’t seem to make much of a difference. When I add a couple logs I just watch it and tinker with the air until it holds around 275, then let it burn till it gets between 225 and 250. Much easier and the results seem to be fine. That’s a load off because I used to sit there for a solid hour staring at the thermometers and constantly tinkering.

Well two of three hit 205 and came off, resting. Last one is clinging to 194 for dear life.
 
Great cook you got going. As mentioned, don't sweat the temp. swings....it's the avg. you are looking for to try and achieve. Butts are very forgiving so I expect stellar results. Looking good so far....

It was great. Warming some back up right now, and was able to feed the cul de sac with plenty left over for all my guys at the shop.

Thanks to you and everyone else for the likes. Unfortunately it’s raining cats and dogs here for the foreseeable future, so going to have to live vicariously through other posts for a while.
