G'day.

Came across this site researching smokers. I have a coal smoker, but mice ate the instructions, so I have no idea what I am doing.

I am considering an electric smoker - venison, roo, emu & rabbit would be my main meats.

Hope to learn a lot, especially about basic smoking, as well as long term storage of smoked meat.

LOVE Brisket - after a few great years in the South (Tx & SC), got the family onto this great tasting meat.

Look forward to a real educational experience.
