I make a game salami that popular locally, using 2/3 game 1/3 fatty pork, But I have never been able to find a breakfast sausage using game that I or friends liked. Would someone be so kind to share a favorite?

What would you consider breakfast sausage? I generally consider sage and pepper for breakfast sausage AC Legg #10 or excalibur pork sausage #10 are great options but I've only used straight pork in these. I've done lots of country style sausage with game it's all been good.

I'd try indaswamps recipe it looks really good, we were gona try it last year- no deer and forgot about it.(thanks for recipe indaswamp) we used mortons sausage and meat loaf seasoning for 30 years or more but discontinued. Bought a knock-off from waltons(had to buy #5 hope it's good)! I am gona make #10 today let u no

This is a recipe I have come up with for pork sausage. Substitute as much game as you want. It is a bit spicy so adjust the cayenne to suit. 1 lbs recipe on the left and 5 lbs recipe on the right. Sorry about the formating...Excel to SMF is not perfect. I was actually going to reduce the water a bit on my next batch to dial it in a bit more.

8 Tbsp black pepper
8 Tbsp rubbed sage
1 Tbsp crushed red pepper
2 Tsp onion powder
2 Tsp garlic powder
2 Tsp anise seed
2 Tsp fennel

Put all in a spice mill and pulverized it.

Mixed 1 Tbsp with a pound of ground meat
