I am so frustrated with my smoker which is a Luhr Jensen Big Chief. I can't get the temp above 175 with the insulating blanket on. That makes for some very slow cooking! I have had 2 Fatties on the smoker for 5 hours now and they are not above 145. I have to figure something out. Any suggestions?

first of all..........you outdoors in the OPEN?

wind steals heat BIG time.....need a windbreak to protect against the nasty EVIL wind..........

I put the meat on at 5pm and after 1.5 hours of smoke (outside) I brought the smoke in the garage with the overhead door closed. The inside temp of the garage is 59. It seems to me, the smoker should be warmer than that.
