Just purchased my smoker yesterday (Pit Boss 820) so I am on the learning curve. I bought a 2.5 brisket and put a liberal amount of dry rub. My model has a "smoke" setting for temperature, below the 200-degree mark and that is where I have it set.
Occasionally I will look and it will be bellowing with a lot of smoke, but not the good kind. It's a burning smell, but I was expecting a smell that would attract the neighbors.
Should I be concerned? It's not a constantly smoking this way, just on occasion.
