From "What's Burning" to "Ooh, that smells good"

Just purchased my smoker yesterday (Pit Boss 820) so I am on the learning curve. I bought a 2.5 brisket and put a liberal amount of dry rub. My model has a "smoke" setting for temperature, below the 200-degree mark and that is where I have it set.

Occasionally I will look and it will be bellowing with a lot of smoke, but not the good kind. It's a burning smell, but I was expecting a smell that would attract the neighbors.

Should I be concerned? It's not a constantly smoking this way, just on occasion.

i'm not sure about your smoker but my mes30 suggested a burn off smoke, which burns off any residuals from the factory before you start smoking meats, as for the smoke you describe i'm not sure but if your brisket looks, smells and taste good I would say enjoy
 
Thanks Jim. I did the burnoff as directed. Made burgers last night that were really good. It smells like the pellets are burning too fast but I'm not sure. I am using the competition blend pellets.
 
i'm not familiar with your smoker, but can you slow the air flow so pellets aren't burning to quick, you shouldn't have clouds of white smoke you'll have to play around with adjustments until you get what we all strive for the thin blue smoke.
