I collect the over rip bananas in the slots in the stand up freezer part of my fridge to be used for banana bread our smoothees. Decided on the banana bread. Dried cranberries added to the recipe.
Used my new fancy dancy bread pan that has a lid that slides over. It almost took 25 minutes more to get to an

IT temp that I like. (195 F-210 F)
 
Looks great, and love banana bread, Mona makes it all the time . Same as you we save the over ripe as the happen in the freezer.

Love banana bread, and best of all, you made not mention of adding nuts!
Nuts are good, just not in bread or salads (IMHO...LOL)
