Great batches of sausages, MeatHunter! Instead of using butcher twine, you can just tie a knot in the end of the casing, though if it'd be simpler for you. I bought several dowels about the same size as the stuffing tubes and take off the tube and push the meat inside into the casing before taking the casing off so I don't waste it (or push it out onto the table for a fry test). Makes it simple to clean out your stuffing tubes and they wash up fine.
Try the Butcher Packer seasonings sometime; they have great mixes! To reproportion them, here's a thread that explains how to do it so you get the right amount of seasonings for the amount of meat you're using:

You can also get a 19mm stuffing tube for sheep casings from Butcher Packer for Little Link sausages or for hot dogs, get the one for the F. D ck stuffer, it fits the 15 lb stuffer nicely (2" bell).
