Freezing Cheese?

I've seen a few threads in here mention freezing cheese. The one time I tried to freeze a block of cheese, it was incredibly grainy when it was thawed.

I've got the Foodsaver vacuum, so it wasn't anything external, it was just a horrible, horrible texture.

What am I missing?
 
Hmm, not sure. I don't have a foodsaver, so I wrap in wax paper, wrap that with foil and put the whole thing in a freezer grade zip top bag. I've not had any issues. I let mine thaw in the crisper for several days before I serve.
 
I freeze shreaded cheese all the time with no problems. I get the big 5 lb bags at Costco and just divide it up into zipock bags. No problems. I tried using the vac sealer once, and only once. Turned the stuff into a big ball of compacted cheese. Wont do that again.
 
The more moisture in the cheese the less successful a freeze will be. If it's a moist cheese, try drying it before freezing. When water freezes..it expands...one of the only liquids that does that BTW. Sigh...figgers.
