Freezer Pork Chop Clean Out

While organizing our Deep Freeze, I realized that we had 3 different pork chops; single boneless, tomahawk, and double bone pork chops.
Defrosted and trimmed them, dusted with my Pork Chop Seasoning (salt, white pepper, garlic, onion, ginger, honey powder, and hickory dust) and into the fridge for a 36 dry brine.

Fired up the PBC with Apple and Post Oak. Set up to run at 270 Degrees. Added the chops and monitored the IT very closely due to the different sized chops

Tomahawk was done first (wrapped in foil and a towel to rest), the double chop and boneless were each done 15 minutes later.

Paired with a half baked potato (my new favorite way to cook them, cut in half and baked open face down on our cast iron griddle in the oven), tomato burrata cheese with white truffle EVOO and aged balsamic, and some roasted brocolli.

Pork was amazing, full of juice and the perfect amount of smoke.

Jason , that's an awesome plate . Perfect color .
The one that's on the plate is what I consider a legit Country style rib .
Has that hunk of shoulder along with the loin , and a rib bone section .

Ryan, Thanks. We started doing baked potatoes that way and we will never go back. The crispy face is a game changer + they cook much faster!

Thank you! The rub is a copy cat recipe for a large spice company that I no longer shop at, but their Pork Chop Seasoning is so good, so I played around and got pretty close to matching their recipe.

Sure looks great Jason and love some pork! I got my PBC at the end of last yr and only used it once. I've got a big cook next weekend so it'll be in action.

Thanks Keith! We love our PBC, much easier for small cooks than lighting up the offset and produces great results!

Well Jason millerbuilds millerbuilds . I said I like your idea of the potatoes back at the top of this post on March 18th.
I kind of forgot about it , and than Ryan Brokenhandle Brokenhandle mentioned it to me about how much he and his family really love it that way.

So I had to try it .

I washed the spuds, cut length ways, oiled and lots of salt and pepper both sides.
Through the CI pan in the oven oiled . Once hot I put the taters in cut side down, left until baked

These are some of the best Roasted Baked potatoes I have had, I can see many other ideas roasting potatoes in the pan in the oven.

Here is a couple shots of the roasted baked I had with a big mess of ribs. This is about the potatoes.

Just flipped when I brought them out of the oven, just to see, Love the crunchy skins all way around

This one is soaked in lots of butter.

Aren't they just the greatest! We loved them! What temp and time did you use? You got a great crust on yours! We are thinking of doing them in our Dutch oven over the fire this weekend!
