Freezer burnt pork doable for sausage?

I don't always vac seal and do pretty good with ziplocks but didn't have much luck this one. I have a 1G ziplock bag of pork chops that got hit pretty bad. Thawing now. I thinking maybe a bolder mix might hide the damage. Anyone know? Thanks in advance.
 
Thanks. Have not dealt with freezer burn in a long time. No discoloration or anything. Will give it a sniff test once thawed and see if that changes my mind.
 
Sam , I did it once . Ruined the whole batch . Thats a taste you can't get rid of . Toss it now , or do all the work and toss it later . Your choice .
 
OK. How do I know if it is in fact freezer burnt? Color/smell/both? There was definitely some air trapped in the bag. If it smells OK thawed maybe OK?
 
My opinion, if its already on its way out , its only gonna get worse .

Those are some pretty big Guns against trying to salvage it, if it's Freezer Burnt.

You can, and that will eliminate SOME of the taste, but if the meat has been freezer burnt, you really don't know to what degree the rest of it has been damaged, and once damaged, the bind will suffer giving you a mushy sausage. And as mentioned, the bad taste...
 
zwiller...if ya really wanna go for it, make a fresh breakfast sausage that will be fried in patties. That is about the only sausage I have made with freezer burnt meat that came out OK......the frying dilutes the freezer burnt taste. Helps if you add maple syrup, sugar or something sweet...

That may be a valid point with the cooking part of it . Like Rick said above it just doesn't work with sausage . Whats a gallon bag of chops ? 2 1/2 pounds ? I saw GFS has whole loins for $1.79 .
 
Pic is a great idea but... Here is the thawed at least. Smells fine. These are bone in and around 3 months old. My gut says these are not ruined. I will cut out anything that is not "pretty". Funny that fried sausage patties was suggested as that is exactly what I want to do. I want to run some Con Yeager breakfast bell sausage and some chorizo based on Marisanki's recipe with new mexican red chili powder.

Yes, would not be a huge loss but love a challenge and opportunity to learn. This bag is 4lbs. I have another.

I say go for it, just don't serve it to company.

For the cost of it. Is it really worth it? I'd toss it if I had any doubts. IMHO.
 
How about something for the 4 legged family member. Boil it with some garlic powder and rice.
