You can, and that will eliminate SOME of the taste, but if the meat has been freezer burnt, you really don't know to what degree the rest of it has been damaged, and once damaged, the bind will suffer giving you a mushy sausage. And as mentioned, the bad taste...I'm not a sausage head, but can you cut off the freezer burn and salvage the rest?

That may be a valid point with the cooking part of it . Like Rick said above it just doesn't work with sausage . Whats a gallon bag of chops ? 2 1/2 pounds ? I saw GFS has whole loins for $1.79 .make a fresh breakfast sausage that will be fried in patties.
