Well after reading/viewing through some awesome posts last week, I couldn't pass up trying some of the choices for myself over the weekend.
Picked up some flank at Costco (wasn't as thick as I would have liked) and some small taters too.
Marinated the flank overnight with a simple balsamic recipe;
1/2 cup olive oil
1 1/2 teaspoons Kosher salt
1 1/2 teaspoons black pepper
1/4 cup brown sugar
2 Tablespoons Worcestershire sauce
1/4 cup balsamic vinegar
5 cloves garlic minced
1 teaspoon crushed red pepper flakes
2-3 sprigs fresh rosemary
Placed in the smoker at 215 with some Mesquite for about 40 minutes til the temp hit 115. Then onto the grill for a quick sear.
For the taters, I attempted to try chilerelleno's salt crusted potatoes, but underestimated the time that it took to get the water to evaporate...so I had to pull them early let them dry and butter them up.
Overall it was a great meal!
