Flank Steak & Potatoes

Well after reading/viewing through some awesome posts last week, I couldn't pass up trying some of the choices for myself over the weekend.

Picked up some flank at Costco (wasn't as thick as I would have liked) and some small taters too.

Marinated the flank overnight with a simple balsamic recipe;

1/2 cup olive oil
1 1/2 teaspoons Kosher salt
1 1/2 teaspoons black pepper
1/4 cup brown sugar
2 Tablespoons Worcestershire sauce
1/4 cup balsamic vinegar
5 cloves garlic minced
1 teaspoon crushed red pepper flakes
2-3 sprigs fresh rosemary

Placed in the smoker at 215 with some Mesquite for about 40 minutes til the temp hit 115. Then onto the grill for a quick sear.

For the taters, I attempted to try chilerelleno's salt crusted potatoes, but underestimated the time that it took to get the water to evaporate...so I had to pull them early let them dry and butter them up.

Overall it was a great meal!

Draining and letting the taters dry should have left a very fine film of salt on the taters.
I did some that way yesterday for dinner, but I did wish that there was a little more salt on them.
Slathered mine in melted butter and crushed red pepper.
 
Don't think I ever saw a a better cooked flank steak . You nailed that one .

Thanks bud. I did drain and let dry...but not long enough and they were not very salty. Was dissapointed that I couldn't replicate your taters. When I had seen your post I showed my wife and she got excited too! lol

Will give it another go this weekend when I have a little more time. Cheers!

Great compliment, thank you! Grilling always makes me a little nervous as it's easy to overcook and ruin a piece of meat. But a reverse sear with some smoke was nice and easy! ;)

Thanks! However, if I was to do it again...I would try to keep the temps as low as possible and try to give it more time in the smoker. It could have used more smoke...didn't take long for the flank to reach 115.
 
Tried those salt crusted taters again this weekend and they still didn't turn out like Chile's! They were good...but just tasted like regular potatoes that were lightly salted. Not sure why I can't figure these potatoes out! LOL

That flank looks wonderful, brings back memories of when I was growing up.
