BTBBQ, sounds like a interesting comination for sausage ! point!
 
Finished pictures. Very interesting, the texture is similar to ground chicken, the taste is like well seasoned smoked fish.

A bare handful of states I would expect to see Fish Sausage come out of, and Minnesota is one of them. :biggrin:

While unusual, it looks great and I bet it tastes great too.
