Sorry that the whole hog thing fell through on you, but you'll find that you'll get more consistant cooking going with butts.  If you be needing a good bean recipe, check out my "Wicked Baked Bean" recipe.  The only thing that gets cooked on the stove top is the bacon, peppers and onion. Everything then gets mixed together, poured into some aluminum foil pans and placed into the smoker for 2 1/2-3 hours.

First off, Have a Happy Birthday...I am no expert on Whole Hog but I didn't think that big a pig was going to fit. There was a lot of talk about scalding the pig before scraping but Grandpa used to Burn the hair off, then scrape. I imagine a propane weed burner would make quick work of the hair removal. In any event Good Luck and have fun. You have a nice smoker there...JJ
