I am so excited and a little nervous. I told in-laws that i would smoke this year's Christmas turkey. I've only smoked two things ever so i don't know it will turn out. I decided to smoke the turkey last minute so i didn't have time to brine it. I did however inject the bird with some Creole butter 24 hours before hand so i hope that makes up for the lack of brining. I forgot to take a before picture, I'll take a picture of it we cut into it. I can't wait
