First time smoking thighs versus just cooking over charcoal.
Using the same rub recipe I used for years, but will be going with Pecan/Apple in the MES 40" Gen1.
Knowingly the skin will not crisp, gonna pop em on the propane to crisp up that skin. Wish me luck ahahah!
 
Good Luck get that grill hot or use a cast iron pan to finish

Cast iron here! Just put em in, aiming for 4 hours, but the meat will tell!

So they turned out very well! I say the homemade rub I use didn't really mesh with the smoke flavor, so that is noted. The meat was just juicy and tender as all get out, everyone enjoyed it and as I play around with different rubs/etc I may actually enjoy chicken more!
