First time smoking thighs versus just cooking over charcoal.
Using the same rub recipe I used for years, but will be going with Pecan/Apple in the MES 40" Gen1.
Knowingly the skin will not crisp, gonna pop em on the propane to crisp up that skin. Wish me luck ahahah!
