first time ring bologna - need help

  1. I plan on making ring bologna for the first time this weekend . Any advice would be very helpful , not sure what kind of meat ( I was thinking about using pork loin or pork butt ) then I was gonna let it hang for about 2 hours , smoke it with hickory chunks in my masterbuilt elite until proper IT is reached . then do I ice bath it or just hang until room temp ?

    Take some pictures and post them. We like to see what everyone is doing. You can make your bologna with pork or beef or a mixture of both.
