My first attempt at curing and smoking bacon. Tried for a pastrami bacon. Came out a little salty and not quite enough pastrami flavor but still tasted really good. Got some pointers and tips from a bacon page on Facebook. Wife asked how much of the belly I bought was left and if I was going to try and improve the same flavor first or try a different flavor next.

Man that bacon sounds awesome, it sucks that it didn't turn out to your expectations... I hate when that happens.

I wasn't thrilled with the texture of the bacon I made a few months ago. It was either under cooked or way to crispy. It didn't have any chew to it, it was more of a shatter when you bit into it. I cooked it in a fry pan and on a rack in the oven, the oven was a little better but not much. In all honesty I wasn't impressed with it by any means. I cold smoked mine because I was trying to replicate the bacon my Gramp's always had hanging in his root cellar too me it was a fail. I guess I need to try it again with cure #1 instead of the Morton's T.Q. I think the required amount of T.Q. made it too salty as well.

Can't wait to give it another go. Maybe soon I won't be buying bacon from the store anymore
