I just signed up this morning. Nice place ya got here. Appears to be a great bunch, I'm looking forward to kicking ideas around with all of you.
I did a bunch of sausage making, smoking and curing for many years, then it started to be less and less the last few years and I need to remedy that problem.
My last smoker was a wood framed smoke house that has a stainless liner. It was heated with LP gas and all manual controlled.But it was a permanent structure and I have moved to a new house.
I have an old all enameled tin fridge that I have had for at least 12-14 years and it is about to become a smoker finally.
This one will be electric heated, probably controlled with a PID controller. It will also have a smoke generator for cold smoking, and more control of the smoke while hot smoking.
I have a small hobby machine shop and a professional woodworking shop, so time is really the only limiting factor for me. How fancy it gets will be determined by how much time I decide to stick into it. My past smokehouses have be quick, ugly,and functional. So I would like to pretty this one up a bit.
Not sure I want to be a member of any club that would let me join, but hey Thanks!
