Well, my first set of spare ribs was a big hit with the family. Kinda panicked when they stalled but some quick responses from the forum had my confidence back up in no time. Trimmed St. Louis style, Light rub, about 6 1/2 hours in the MES on 240 with hickory. Pulled them out at 190 IT because the fam looked like they might resort to cannibalism if I didn’t get em fed. Finished with some smoked squash, and the rest of the fixins.
