I picked up StL cut ribs from Costco on Friday, which is rare for me. I haven't bought ribs from them in a long time...like years. Usually I buy untrimmrd full racks from WinCo.
Anyway, last I remembered, Costco sold 2-paks. To my surprise, it was a.3-pak! Said so right on the label. Seasoned and vac-sealed one rack, smoking the other two on the Kettle as I type. Doing them 300°F+ for a 4.5 to 6 hr smoke With hickory. Using a new rub of Kinder's Bourbon Steak.
