Good looking ribs! And yes just keep trying different variations until you settle on what you like best! To me ribs were the most important thing I wanted to nail. Started off following SmokinAl SmokinAl perfect ribs every time and really loved them, had to cut them in half to fit in my mes 30. Wanted to use my cheap $20 kettle to do ribs, so found out I had no temp control either like you mentioned... no wrap and done at 300 degrees it takes way less time and its our favorite way now!

My first smoke was ribs too. They were not my best effort, but what did I know, everybody loved them!
