I cut the onions in cross sections and smoked them for 4 hours at 225 degrees.. Just EVOO, salt and pepper. Pretty tasty..
 
Here's the beer can chicken at 4 1/2 hits at 250 degrees.. My wife said " Wow very juicy".. My job is done here... Lol..
 
Thanks for the kind words.. Going to try fish next time.. I'm definitely hooked.
 
Those onions look awesome!  I've done what's called melted onions as well, and hey turned out amazing also.
