Doing my first smoke now trying to keep the temp at 225 I have a smoke hollow 38 propane and basically have to keep the gas setting at its lowest I read to go by the hour and a half per pound but as I'm smoking that seems to be too long am smoking a 7.5 lb. brisket and 5.5 lb. pork but threw the brisket on at 4:00 and it's at 125 internal temp. Was wondering should I wrap it or leave it like it is till it hits 190
 
Do some research here on "needle valve" mod. A must for low temp cooking in a propane smoker.

As for time at 225 I always figured 2 hours per pound for pork butts. The brisket is a different beast it's not so much about weight per pound but thickness. With that said both will be done when they are done. Pork butt I take to 200-205. Brisket I start probing around 185 and take it off when what I'm probing with slides in like warm butter. That could be anywhere from 185-200+.

As for foil and wrapping, I don't. I cook straight on the grate the entire cook.
 
As for the temperature I naught the iweber digital probe moniter hooked To my iPad by bluetooth with a probe in each and one for the grill I like it that way I don't have to open it up thanks for the help
