Finally got the chance to put some meat on my new Traeger, did some pork back ribs I picked up from Costco. Definitely less smoke flavor than my UDS but they were good.
I like cutting them up so when I braise them they fit in the pan better.
I put 2 ambient temperature probes in to see if there would be a difference from one side to another, there was a 15-20º difference but I'm not sure if that could have been due to the proximity of the meat to the probe. Next time I will run it for a bit longer before putting the meat on.
