Hello folks,

I hope all is well with all the pit master and builders out there. The year is halfway over and I'm just now doing my first real smoke of the year. Tells you what the year has been like so far huh?!! Such is life as they say. I decided to do a little something for my maintenances and operations staff at the college I work at so I put a little something on for them today. Doing a brisket, two pork shoulders, 4 slabs of ribs, and some hot links.

brisket all seasoned and on first

followed by pork shoulders

and the ribs

I have a pretty good rub recipe I swear by now. nothing unusual really. I do add some brown sugar when I apply to pork though

Can I come work for you?

Now just have to sit and watch the fire and enjoy this 75 degree California day. I'll pull the ribs and wrap then in about an hour.

I try to be. I don't forget where I come from and to appreciate people no matter what their role is at the job. And I learned early in my career, you take care of your secretary and the custodians, and your life will be a hell of a lot easier.

all and all. a good day. used about 1/4 bag of charcoal and 7 sticks mix of pecan and oak. the ole man holds heat pretty good once up to temp. here are the results. still waiting on the brisket.

I decided last year to step my game up when a guy I met said that he makes his own sauce too. I tinkered with a few recipes till I got it just right. pretty simple. ketchup, brown sugar, apple cider vinegar, mustard, butter. and spices (I use my rub recipe for spice).
