I put a slab if ribs , tenderloin , and a 12 lb butt around 3 pm yesterday. Everything went well took a little playing around with the smoker to get use to it. The tenderloin was a little dry but not bad and the ribs where awesome. Had a little flair up problems so I will be investing in a skillet. And of course the butt is still cooking. I finally moved it to the oven around 2 am and it's at 178 now. This has been the longest stall ever. I don't like to foil because I love the bark. I am use to smoking with charcoal so this was a new experience for me

7 am and it's done. The bone come out clean with a IT of 198. It's wrapped and relaxing for awhile
