I wanted to try my hand at this so after finding a nice 4.5# top round roast at a great price and scrolling thru some threads here, I figured I’d give it a shot.
I wanted to keep this one simple so I just let it sit in some Worcestershire sauce for a few hours, made some slits in the roast that I then stuffed with some garlic and applied a liberal coating of Montreal Steak Seasoning and onto the smoker.
Tossed it on the smoker with an average temp of 250* until The IT reached 140*, that took about 3.5 hours.
After it cooled, I put in the fridge overnight so it would be easier to slice. I took it out the next afternoon and cut it in half, it came out just a beautiful rare. Ready for the slicer!
Now to break in my new toy :).
It was just Mrs. JK and I so I only did a couple small Sammies. Mrs. JK made some killer au ju which I put in a pan on the griddle. I then put some of the sliced beef in to it to warm up before I put it on the griddle with some Provolone. I didn’t get the final money shot but take my word when I say this was probably the best roast beef we have ever had!
