Tried my hand at ribs, for the first time, on the new RecTec.
I coated them in my favorite dry rub from a local favorite, Smokin' In Style BBQ.
On the RT at 265 (250 actual temp) and let the wait begin. While waiting, I mixed up some Sweet Baby Rays, Thai Chili wing sauce, lemon pepper and garlic & herb seasoning. At an IT of 185 I mopped on the mixture and let them go to 195.
The ribs turned out looking great and tasting great, though I think they should have stayed on to an internal of 205'ish. The rack that was over the rear of the cooker bit off the bone near perfectly. The rack that was in front had to be pulled from the bone a little harder than I would have liked.
No pics of the prep or cook, but here is the final product.
Still loving the RecTec and have cooked some of the best food of my life on it!
