Yesterday I smaked my first pork butt. It turned out fantastic. It took about 7.5 hours. I need to remember to take some pictures next time. I used Uncle bubba's rib rub on it. you can find the recipe for it on recipe.com. I smoked the meat for about 3 hours then let it cook to an internal temp of about 160 the wrapped it in foil until it reached 200, then let it sit for about 20 min. the bone pulled out clean. I am digging the low and slow smoking. So far I have Smoked a brisket, turkey legs and now a Boston Butt. I will keep you posted on my newest adventures.
