First pork butt of the season.

I know. Late start this year! But things just got in the way.

6 pounder that was given a rub of brisket spice blend a couple day ago. Smoker is running at 250 Using comp blend pellets in the mailbox.

Stalled at 158. Wrapped. And waited. And waited. And, well. You get the point. This little sucker stalled big time. Finally hit 203 after almost 14 hours. The inkbird showed the story. Darn thing flat lined at 160 for 6 hours!! This was the only butt I could find. Smart move waiting until the last minute to look for one. At it was fattier then usual.

The results were very good though. Moist and tender. And it tastes fantastic!
 
Looks delicious, Steve. What’s your plan with it? I did one yesterday and I’m thinking Pulled Pork Loaded Fries with the leftovers. If you have any ideas, please let me know.

Thanks! Since this took so long yesterday. It wasn't dinner last night as planned. Had take out pizza. Today I already have the fixins for soup. So tomorrow this will be PP burritos with cheese and onions. And a drizzle of a north Carolina vinegar sauce. With fries.

That’s a tasty looking pile of pulled pork Steve! Too bad it wasn’t done in time for dinner but pulled pork is always better the next day!

Well Steve it seems if there's one thing you can count on in smoking a porkbutt lately it's that you can't count on it at all. I'm thinking the upcoming burritos will have made it all worthwhile, I'll skip the fries and have a little sour cream and avocado on mine please! RAY
