Mes 30 8lb 13 hour smoke in hickory, apple and cherry. Sprayed with apple juice an captain. Always smoked them fat side up but after reading the sticky i tried this way. No before pics but just got it off smoker
Looks good. I just smoked a brisket yesterday fat cap down for the first time also. Saw the thread. 13 pound packer smoked for 13 hours in my UDS with hickory.I thought it came out great.
