First Pastrami!!

this was my first attempt at pastrami form a Kroger Corned Beef. Turned out pretty good.

Soaked for 12 hours with 2 water changes.
rubbed and left it overniight
on the WSM for about 10 hours and it got to 170
Braised in beer for one hour to IT 195
here is the progression in pics.

Looks like a winner Sandy. Tropic's definitely knows his way around a cooker.

thanks guys! we cut into it after it cooled and the wife loved it. and she thought she didnt like pastrami... Come on man - everyone like pastrami.

that would like to start with a bigger one, but I kinda doubt Kroger is packing 5-7 lb corn beefs. Ill watch but the 4 pounder was the biggest they had when i picked it up.

Any one seen CB that size?
 
Don't see them bigger around here... Of course you could always get a big brisket flat and make your own :D:D

Just what I was looking for today!
I have a 4.5 lb corned beef eye of round that I'm going to fire up today.
can't wait!

Here’s a picture of it on Mt Pitboss upgraded with the SmokeDaddy PID controller and with my old MES water pan and my AMZN tube for additional smoke
 
I learn something every time I jump on this forum. I love Pastrami. Now I have to try this. Bookmarked for future reference. Thanks!
 
Every year the day after St. Patrick's day is a great time to go out and buy up the now-on-sale leftover corned beef.
