WOW.

I would be interested in seeing a full post on it.

Nicely done......I've seen it done on DDD and it does look ez to do but I've never attempted it....the fresh looks so much better than those softball sized ones sold in stores......good job....Willie

Thanks guys, only takes 30 min.  I went to cheesemaking.com  bought my rennet from her and followed her directions, she also has a video pretty easy. on your final kneading make sure you add your salt ours needed a little more. Next time !

The only thing you need is rennet (tablets or liquid) I bought the tablets only use 1/4 tab for a gallon of milk

Citric Acid (grocery store )  1 1/2 tsp for a gallon of milk

Non chlorinated water (I used filtered out of my faucet)

I used store bought Whole milk  It is processed here in Tyler so I called the dairy to see what temp they take it to The lady said they only go to 172 º  you don't want milk that has been ultra pasteurized at higher temps.

That's it !!!

so it will be next week before I will get to give it a try. And as with anything I do, I am going to have  to smoke some of it

Fresh milk was what I wanted, but went ahead and tried store bought from Brookshire's which has their Dairy here in Tyler, so I called the plant to see what temp they pasteurized at  the person said 172º and they did not ultra pasteurize and should be fine for my Mozzarella .
