So I got my fatties all put together, I have them in fridge to solid up, going to cook in morning, ideas on time and temps? What type of wood would you do out of these choices, hickory, cherry, mesquite? Let me know!
 
At 225, they usually take about 2 1/2 to 3 hours.

Put a probe in one & it should read 165 when they are done.

I like hickory for fatties.

I really like cherry or a 50/50 mix of cherry and pecan.
