First Cook - Pork Butt

Well, the first cook (and eat) is done. Did a smallish pork butt on the Vision. I think I put too much charcoal in though because I couldn't keep it at 250 and had temps of 300ish :( Just did S&P. Wanted to do a "naked" one right out of the gate and go from there. Wrapped it in foil at 160, took it off at 205, wrapped in a towel and into the cooler to rest.

All in all, it came out not too shabby for the first time outta the gate but it will definitely be a learning experience. A tad dry but I'm not bummed out and Nancy was happy so that's good. Made some slaw and baked beans with it.

Looks good. I’d eat it. One thing I do though for long cooks like pork butts and anything 6+ hours usually is wait a few hours before I stick the thermometer in the meat. I don’t know where I read it but I once read about allowing bacteria to grow or something. Don’t remember exactly and I could be completely wrong but since reading that (even though I never fact checked it) I figured there is no use for it to be in for the first few hours anyway. Looks good, getting my 1st smoker in a few days. This is what I want for my 1st cook too, right down to the slaw and beans. But, I don't think I can wait 8-10 for the cook, plus 2 hours to assemble the smoker, plus 2 burn ins and a seasoning. I don't think I'd make it. Definitely want to make this in the first few days. Was your slaw creamy or a vinegar one?

I pan (not wrap) my pork butt.
I finished my last butt in the pellet grill. Usually I move to the oven and wrap the pan.
 
Looks good . Enjoy the new pit and keep on cooking. Time and experience are the keys to getting better.
