Cooked at 240 until it hit plateau at 162 IT. I pulled off the smoker and finished it in the oven in a pan covered with foil at 225 until it hit 200 IT. Smoked with apple chips and used the finishing sauce in the sticky. Couldn't tell whether or not the finishing sauce did a lot since this is my first butt cook and haven't tried without it yet. I did save the dripping and put in the fridge to separate the fat. I was planning on pouring that juice on some tonight when I eat some more. There is lots of leftovers with only two of us in the house.
