I do my ribs at 275, so my butt had to also. So far so good, I think. I have an hour to go. I dont have the nice bark like I have seen in photos on here, but it smells good. lol. I smoked for three hours bare, tented for one hour, now I opened the tent and put on a glaze(brown sugar,apple juice,bbq sauce). It is at 200 now. Hopefully I can get some bark going or something. I have never tried smoking a butt before.
