So I just bought a new WSM 22.5 smoker. First cook after letting it run at 320F for 3 hrs to "season" it was chicken legs. Just used S&P and they turned out awesome. Really juicy and great smoke flavor.
Decided at last minute to do my first brisket. Got a 4lb brisket flat at local Sams for $6.64 a lb. Decided to keep it simple with just S&P. Not much time so going to run smoker around 275F until probe tender using pecan and a little of mesquite wood. No wrapping. Hope this isn't a mistake. Don't want it to take forever and hope its done in time for dinner. Tried to get most of silver skin off but wasn't easy so decided to leave rest on.
Found a couple of prime packers at sams while I was there for $3.68lb. Not sure if this is cheap or not. Choice was $3.28lb. What do you guys think? Only has 2 primes left. Not sure if I should get them before they're gone or not.
