well here it is this is the brisket i did on saturday my first one was a 7lb and was planning on cooking for 10 hrs finished in 5.5 hrs found out that me smoker therm is not right was reading 250 the whole cooking time when the brisket finished early i figured i better check it out put the meat therm in and it was reading 325 brisket was a little on the dry side(i thought) but every one else liked it and it had good flavor

If I can find one smaller than all the 9+ lb'ers I've been spotting at Wal Mart lately, I'm gonna do one this weekend.
