First Brisket and two Pork Butts today

    I'm not really sure where I should be posting this thread since its beef AND pork but I decided to post in the beef forum because while I've done about 4 or five pork butts this is my very first attempt at a brisket. If there is a more appropriate place I should have posted this please feel free to let me know and I won't be offended if the mods move it. So, now that I got the formalities out of the way... ON TO THE SMOKE!!!!

    The brisket is 3.99 lbs (point), and the two pork shoulders are 4.20 and 4.24 lbs. The MES 30 is to temp, the meat and the AMNPS have been in about a half hour and the TBS is looking just about perfect.

     It's 6:30 AM now and I am aiming for a 6PM dinner time. I like to try to keep my smokes to 8 hours or so and the rule of thumb I always hear (and have experienced so far with pork) is about 2 hours per pound + 2 hours extra C.Y.A. time and I'd like to allow one to two hours rest time. I decided as a little precaution that I would go a little hotter on my smoker temp this time. I usually go 200 but this time I'm going going 275. and if Dinner gets pushed an hour to 7PM, thats fine too so I think I'm good on time.

    Oooh man sounds like a good dinner!

    I also like the Gibson SG, it would suite my Marshall JCM 2000 just fine [​IMG]

    Thanks man, I've had great luck with the pork butts I've done so far so I'm sure those will come out great. I'm hoping the briskie comes out good. We'll see :)

    Yes, Marshall amps and Gibson guitars are a match made in heaven. The SG in my avatar is my pride and joy. It's my all original 1962 with the rare Ebony Block tail piece. I still can't believe I own it and sometimes I have to pinch myself to make sure I'm not dreaming lol.

    Your plan is solid. Points a very forgiving and a similar Muscle/Fat/Collagen make-up to Pork Butts. They should all be great...JJ

    Unfortunately I stopped playing about 2005 I just recently sold my first electric guitar setup, guitar/amp/books/picks/etc for $60 to some kid so he could get started. His friend was shocked at the deal I was giving him, but hey I remember what its like to be young and really want to learn how to play.

    I just can't bring myself to sell my DSL 401, I really love this lil amp, I wish I had the DSL 201 and almost bought one a few months ago just for the sake of owning it, I should have bought it before they discontinued it. Now since the JCM line is no more it makes me want to hold on to this thing forever. I owned the TSL 100 for a while but I gave it back and eventually got this amp.

    Update. Good news and bad news.

    The good news: Four hours in and the briskie is at 165 and the two butts are both right around 160. Looking like dinner time of 6 is going to be no problem at all. Might even finish early?

    And the bad news:

    So I have 2 new neighbors, one right across from me (a husband and wife) and one directly above me (two guy room mates)..They both moved in in the last 2 weeks. I talked to the one across from me a few days ago and he and his wife LOVE BBQ and he loves to grill so I won't be having any problems with him. I talked to one of the new neighbors thats directly above me a few minutes ago and told him what I'm doing and asked if it bothered him and was surprised he said yes, it does. So I told him if it bothers him enough to let me know and I'll stop the smoke. He left though so and his roommate is also gone so I'm certainly not stopping right now. It's not even puting a ton of smoke out and the guy was kind of a DB. But hey... what are you gonna do lol

    Well, some more good news. The room mate from upstairs just got home and I stopped him and talked to him for a minute., Same routine, told him what I.'m doing asked him to please let me know if it bothers him and that I don't want to disturb anyone etc. Unlike his room mate he was totally cool. Said at scared him at first because he saw smoke and thought something was on fire but then saw me and realized what I was doing and said no big deal at all and don't worry about it. Hopefully his room mate chills out. I only plan to do a long smoke maybe once a month, and maybe a quick tri-tip smoke once a month too so come on it really shouldn't be THAT big a deal, right?

    Looks like the smoke is going great...sorry about the neighbor though. Hard to believe there are people who don't appreciate good Que. Doesn't this guy realize there's nothing smells as good as TBS....to each his own, I guess!

    The brisket is now done and in the cooler. Actually, probably a little TOO done but oh well. I only have one probe and it was in one of the butts which last time I checked was about 10 degrees behind the brisket. When the butt was at 180 I decided to check the brisket and it was already at IT of 203. I pulled it out double foiled it wrapped in a towel and into the cooler for what looks like a 4 hour rest until 6PM. The butts are at 181 and 183 at the moment so they still have a little bit to go. I will pull them at 200 (or maybe 195, not sure yet lol).

    And the two butts are now done. One was pulled out at 200 and the other hit 207. I really need to get at least a second probe if not two more.

  17. Looks really good and I know it will be taste even better.  Sounds like with the neighbor that you had more than 2 butts to deal with today. LOL...

    They all look good. What temp were you at the majority of the time? The Point is looking pretty dark or is it just the Pic...JJ
